Asparagus and Swiss Cheese Frittata

Ingredients

  • 12 large eggs
  • ¼ cup milk
  • ¼ cup freshly shredded Parmesan cheese
  • ¼ tsp salt
  • 1 cup shredded Swiss cheese, divided
  • 1 Tbsp butter
  • 1 lb asparagus, trimmed and cut into 2-inch pieces 

Instructions

  1. Preheat oven to 350°F. Whisk together eggs, milk, Parmesan, and salt in a bowl; stir in ½ cup Swiss cheese.
  2. Melt butter in a large ovenproof skillet over medium heat. Add asparagus; cook 2 minutes. Add egg mixture; cook over medium heat 4 minutes or until edges begin to set. Sprinkle with ½ cup Swiss cheese.
  3. Bake 15 minutes or until set.

Side Dish Ingredients

  • ¼ cup extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp pepper
  • 1 (6-oz) pkg arugula
  • ½ cup sliced red onion
  • 1 (11-oz) can mandarin oranges in light syrup, drained
  • 6 plant-based sausage links

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, and pepper in a large bowl. Add arugula, onion, and oranges; toss.
  2. Cook sausage according to package directions.
