Asparagus and Swiss Cheese Frittata

- 12 large eggs
- ¼ cup milk
- ¼ cup freshly shredded Parmesan cheese
- ¼ tsp salt
- 1 cup shredded Swiss cheese, divided
- 1 Tbsp butter
- 1 lb asparagus, trimmed and cut into 2-inch pieces
Instructions
- Preheat oven to 350°F. Whisk together eggs, milk, Parmesan, and salt in a bowl; stir in ½ cup Swiss cheese.
- Melt butter in a large ovenproof skillet over medium heat. Add asparagus; cook 2 minutes. Add egg mixture; cook over medium heat 4 minutes or until edges begin to set. Sprinkle with ½ cup Swiss cheese.
- Bake 15 minutes or until set.

- ¼ cup extra virgin olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- ½ tsp pepper
- 1 (6-oz) pkg arugula
- ½ cup sliced red onion
- 1 (11-oz) can mandarin oranges in light syrup, drained
- 6 plant-based sausage links
Side Dish Instructions
- Whisk together oil, vinegar, mustard, and pepper in a large bowl. Add arugula, onion, and oranges; toss.
- Cook sausage according to package directions.
