Garlic-Parmesan Shrimp
Lemony Farro SaladIngredients
- ½ lb peeled and deveined, large raw shrimp
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- ¼ tsp Italian seasoning
- ⅓ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Toss together shrimp, oil, garlic, and Italian seasoning in a bowl. Place shrimp in a single layer on a baking sheet. Sprinkle with cheese.
- Bake 8 minutes or until shrimp turn pink.
Side Dish Ingredients
- ⅓ cup quick-cooking farro or barley
- ¾ cup halved grape tomatoes
- ½ cup chopped English cucumber
- ½ (4-oz) log goat cheese, crumbled
- 3 Tbsp chopped fresh parsley
- 3 Tbsp chopped kalamata olives
- 3 Tbsp lemon vinaigrette
Side Dish Instructions
- Cook farro according to package directions.
- Toss together farro, tomatoes, cucumber, cheese, parsley, olives, and vinaigrette in a bowl.
