Garlic-Parmesan Shrimp

Ingredients

  • ½ lb peeled and deveined, large raw shrimp
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ¼ tsp Italian seasoning
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Toss together shrimp, oil, garlic, and Italian seasoning in a bowl. Place shrimp in a single layer on a baking sheet. Sprinkle with cheese.
  2. Bake 8 minutes or until shrimp turn pink.

Side Dish Ingredients

  • ⅓ cup quick-cooking farro or barley
  • ¾ cup halved grape tomatoes
  • ½ cup chopped English cucumber
  • ½ (4-oz) log goat cheese, crumbled
  • 3 Tbsp chopped fresh parsley
  • 3 Tbsp chopped kalamata olives
  • 3 Tbsp lemon vinaigrette

Side Dish Instructions

  1. Cook farro according to package directions.
  2. Toss together farro, tomatoes, cucumber, cheese, parsley, olives, and vinaigrette in a bowl.
