Cornflake Crusted Chicken and Waffle Skewers

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups crushed cornflakes cereal
  • 1 Tbsp Cajun seasoning
  • 3 Tbsp olive oil
  • 1 (10-count) pkg frozen waffles
  • 1 (8-oz) bottle pancake syrup

Instructions

  1. Preheat oven to 425°F. Pound chicken breasts to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cut into 3-inch pieces and season lightly season with salt and pepper.
  2. Place flour in a shallow dish. Lightly beat eggs in a second shallow dish. Stir together cornflake crumbs, seasoning, and oil in a third shallow dish. Dredge chicken in flour, dip in egg, and dredge in cornflake mixture to coat. Place on a lightly greased baking sheet.
  3. Bake chicken 15 to 20 minutes or until done. Heat waffles according to package directions. Cut waffles into thirds.
  4. Skewer chicken and crispy waffles on bamboo or metal skewers. Drizzle with syrup.

  • 2 large red apples, sliced
  • 2 cups seedless red grapes
  • 1 (16-oz) container strawberries, halved
