Cornflake Crusted Chicken and Waffle Skewers
Apple, Grape, and Strawberry TossIngredients
- 2 lb boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups crushed cornflakes cereal
- 1 Tbsp Cajun seasoning
- 3 Tbsp olive oil
- 1 (10-count) pkg frozen waffles
- 1 (8-oz) bottle pancake syrup
Instructions
- Preheat oven to 425°F. Pound chicken breasts to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cut into 3-inch pieces and season lightly season with salt and pepper.
- Place flour in a shallow dish. Lightly beat eggs in a second shallow dish. Stir together cornflake crumbs, seasoning, and oil in a third shallow dish. Dredge chicken in flour, dip in egg, and dredge in cornflake mixture to coat. Place on a lightly greased baking sheet.
- Bake chicken 15 to 20 minutes or until done. Heat waffles according to package directions. Cut waffles into thirds.
- Skewer chicken and crispy waffles on bamboo or metal skewers. Drizzle with syrup.

- 1 (16-oz) container strawberries, halved
