Turkey Cuban Quesadillas

Tomato Coleslaw and Onion Rings

Ingredients

  • 6 burrito-size flour tortillas
  • ½ lb thinly sliced deli ham
  • ½ lb thinly sliced deli turkey
  • 1 (8-oz) pkg sliced Swiss cheese
  • 1 cup dill pickle chips
  • 6 Tbsp butter, divided
  • ½ cup mayonnaise
  • ½ cup whole-grain Dijon mustard
  • 1 Tbsp horseradish

Instructions

  1. Arrange ham, turkey, cheese, and dill pickle chips on one side of each tortilla. Fold tortillas in half.
  2. Melt 2 Tbsp butter in a large nonstick skillet over medium heat. Add 2 quesadillas, and cook 4 to 5 minutes per side or until golden brown. Repeat procedure with remaining quesadillas and butter.
  3. Meanwhile, stir together mayonnaise, mustard, and horseradish in a bowl.
  4. Cut quesadillas into wedges and serve with mayonnaise mixture for dipping.

  • 3 Tbsp olive oil
  • 2 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp whole-grain Dijon mustard
  • 1 (16-oz) pkg tri-color coleslaw mix
  • 1 pint grape tomatoes, cut in half
  • 2 (16-oz) pkg frozen onion rings

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, and mustard in a large bowl; add coleslaw mix and tomatoes, toss.
  2. Bake onion rings according to package directions.
