Turkey Cuban Quesadillas
Tomato Coleslaw and Onion Rings
Ingredients
- 6 burrito-size flour tortillas
- ½ lb thinly sliced deli ham
- ½ lb thinly sliced deli turkey
- 1 (8-oz) pkg sliced Swiss cheese
- 1 cup dill pickle chips
- 6 Tbsp butter, divided
- ½ cup mayonnaise
- ½ cup whole-grain Dijon mustard
- 1 Tbsp horseradish
Instructions
- Arrange ham, turkey, cheese, and dill pickle chips on one side of each tortilla. Fold tortillas in half.
- Melt 2 Tbsp butter in a large nonstick skillet over medium heat. Add 2 quesadillas, and cook 4 to 5 minutes per side or until golden brown. Repeat procedure with remaining quesadillas and butter.
- Meanwhile, stir together mayonnaise, mustard, and horseradish in a bowl.
- Cut quesadillas into wedges and serve with mayonnaise mixture for dipping.

- 3 Tbsp olive oil
- 2 Tbsp rice vinegar
- 1 Tbsp honey
- 1 Tbsp whole-grain Dijon mustard
- 1 (16-oz) pkg tri-color coleslaw mix
- 1 pint grape tomatoes, cut in half
- 2 (16-oz) pkg frozen onion rings
Side Dish Instructions
- Whisk together oil, vinegar, honey, and mustard in a large bowl; add coleslaw mix and tomatoes, toss.
- Bake onion rings according to package directions.
