Tropical Blackened Shrimp Bowls

Ingredients

  • ¾ cup black beans, drained and rinsed
  • ¼ cup gluten-free chicken broth
  • ¼ tsp ground cumin
  • ¾ lb peeled and deveined, large raw shrimp
  • 1½ tsp gluten-free blackened seasoning (see Note)
  • 1½ tsp olive oil
  • 1 cup pineapple chunks
  • 1 avocado, sliced
  • ¼ cup fresh cilantro leaves
  • 2 limes, cut into wedges

Instructions

  1. Combine beans, broth, and cumin in a saucepan over medium heat. Simmer 5 minutes or until thoroughly heated.
  2. Meanwhile, toss shrimp with seasoning. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until shrimp are almost pink. Add pineapple, and cook 4 to 6 minutes or until pineapple is lightly browned.
  3. Divide Steamed Rice recipe among 3 bowls; top with beans, shrimp mixture, avocado, and cilantro. Serve with lime wedges.

Side Dish Ingredients

  • ¾ cup long-grain white rice

Side Dish Instructions

  1. Cook rice according to package directions. Season with salt and pepper to taste.
