Peaches and Cream Oatmeal

Ingredients

  • 3 peaches, divided
  • 3 cups water
  • 1 cup 1% low-fat milk
  • 1 cup steel-cut oats
  • ½ tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ¼ tsp salt
  • 1 (6-oz) carton low-fat vanilla yogurt
  • ¼ cup chopped pecans

Instructions

  1. Coarsely chop 2 peaches. Thinly slice 1 peach. Bring water and milk to a boil in a large saucepan. Stir in oats, vanilla, cinnamon, and salt.
  2. Simmer, uncovered, 25 to 30 minutes or until oats are cooked to desired doneness, stirring occasionally. Stir in chopped peaches.
  3. Divide oatmeal among 4 bowls. Top each serving with yogurt, nuts, and peach slices.
