Peaches and Cream Oatmeal
Ingredients
- 3 peaches, divided
- 3 cups water
- 1 cup 1% low-fat milk
- 1 cup steel-cut oats
- ½ tsp ground cinnamon
- 1 tsp pure vanilla extract
- ¼ tsp salt
- 1 (6-oz) carton low-fat vanilla yogurt
- ¼ cup chopped pecans
Instructions
- Coarsely chop 2 peaches. Thinly slice 1 peach. Bring water and milk to a boil in a large saucepan. Stir in oats, vanilla, cinnamon, and salt.
- Simmer, uncovered, 25 to 30 minutes or until oats are cooked to desired doneness, stirring occasionally. Stir in chopped peaches.
- Divide oatmeal among 4 bowls. Top each serving with yogurt, nuts, and peach slices.
