Almond-Raisin "Couscous" and Sugar Snaps

Ingredients

  • 2¼ tsp brown sugar
  • 2¼ tsp canola oil
  • ⅓ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground cumin
  • ⅛ tsp smoked paprika (or use regular)
  • 3 (4-oz) salmon fillets

Instructions

  1. Preheat oven to 425°F. Combine brown sugar, oil, garlic powder, salt, cumin, and paprika. Rub over fish. Place fish, skin sides down, in a 9-inch baking dish.
  2. Bake 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (16-oz) pkg cauliflower crumbles 
  • 1 Tbsp canola oil
  • ¼ tsp salt
  • 1 clove garlic, minced
  • 2 Tbsp sliced almonds
  • 2 Tbsp golden raisins
  • 1 Tbsp chopped fresh parsley 
  • 1 (8-oz) pkg sugar snap peas

Side Dish Instructions

  1. Preheat oven to 425°F. Combine cauliflower, oil, salt, and garlic in a roasting pan. Bake 18 to 20 minutes or until browned, stirring once.
  2. Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 6 minutes or until fragrant. Stir nuts, raisins, and parsley into cauliflower mixture.
  3. Steam peas according to package directions.
