Buffalo Chicken-Cauliflower Tacos

Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 2 Tbsp olive oil
  • 1½ tsp Ranch seasoning mix
  • 6 corn tortillas
  • 1½ cups shredded rotisserie chicken
  • 2 Tbsp Buffalo sauce
  • 1 avocado, sliced
  • Chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 450°F. Toss together cauliflower, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until cauliflower is tender, stirring halfway through baking.
  3. Meanwhile, heat tortillas according to package directions.
  4. Combine chicken and buffalo sauce. Divide chicken and cauliflower among tortillas. Top with avocado and, if desired, cilantro.
