Buffalo Chicken-Cauliflower Tacos
Ingredients
- 1 (12-oz) pkg cauliflower florets
- 2 Tbsp olive oil
- 1½ tsp Ranch seasoning mix
- 6 corn tortillas
- 1½ cups shredded rotisserie chicken
- 2 Tbsp Buffalo sauce
- 1 avocado, sliced
- Chopped fresh cilantro (optional)
Instructions
- Preheat oven to 450°F. Toss together cauliflower, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until cauliflower is tender, stirring halfway through baking.
- Meanwhile, heat tortillas according to package directions.
- Combine chicken and buffalo sauce. Divide chicken and cauliflower among tortillas. Top with avocado and, if desired, cilantro.
