Turkey-Avocado BLTs
Strawberries with Fresh Mint
Ingredients
- 4 slices center cut bacon
- 1 avocado, mashed
- 2 Tbsp reduced-fat mayonnaise
- 1 tsp lemon juice
- 8 (1-oz) slices whole-grain sandwich bread, toasted
- ½ lb thin deli-sliced oven-roasted low-sodium turkey
- 1 tomato, sliced
- 1 cup spring mix
Instructions
- Cook bacon in a large nonstick skillet over medium-high heat 5 to 7 minutes or until crisp; drain on paper towls .
- Stir together avocado, mayonnaise, and lemon juice; spread over one side of 4 bread slices.
- Layer with turkey, bacon, tomato, lettuce, and remaining bread slices.

- 3 cups quartered strawberries
- ¼ cup chopped fresh mint
- 2 Tbsp lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Toss together all ingredients in a large bowl. Chill until ready to serve.
