Turkey-Avocado BLTs

Strawberries with Fresh Mint

Ingredients

  • 4 slices center cut bacon
  • 1 avocado, mashed
  • 2 Tbsp reduced-fat mayonnaise
  • 1 tsp lemon juice
  • 8 (1-oz) slices whole-grain sandwich bread, toasted
  • ½ lb thin deli-sliced oven-roasted low-sodium turkey 
  • 1 tomato, sliced
  • 1 cup spring mix

Instructions

  1. Cook bacon in a large nonstick skillet over medium-high heat 5 to 7 minutes or until crisp; drain on paper towls .
  2. Stir together avocado, mayonnaise, and lemon juice; spread over one side of 4 bread slices.
  3. Layer with turkey, bacon, tomato, lettuce, and remaining bread slices.

Side Dish Ingredients

  • 3 cups quartered strawberries
  • ¼ cup chopped fresh mint
  • 2 Tbsp lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Chill until ready to serve.
