Bacon-Wrapped Chicken with Balsamic-Mustard Sauce
Green Beans and Mashed Potatoes
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 4 slices bacon
- ½ cup sliced red onion
- 1 clove garlic, minced
- ½ Tbsp all-purpose flour
- ½ cup chicken broth
- 1½ Tbsp balsamic vinegar
- 1 Tbsp whole-grain mustard
Instructions
- Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Wrap 2 bacon strips around each chicken breast. Cook chicken in a nonstick skillet 3 to 4 minutes per side or until bacon begins to brown. Transfer chicken to a foil-lined rimmed baking sheet. Bake 10 minutes or until chicken is done and bacon is crisp.
- Meanwhile, add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
- Stir in broth, vinegar, and mustard; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over chicken.
