Shrimp Rolls
Pear-Kiwi Toss
Ingredients
- 1½ lb peeled and deveined, large cooked shrimp
- ¼ cup reduced-fat mayonnaise
- 1 Tbsp fresh lemon juice
- 1 tsp Dijon mustard
- ½ cup chopped celery
- 2 Tbsp chopped fresh parsley
- ½ tsp Old Bay seasoning (or use paprika)
- 8 Bibb lettuce leaves (optional)
- 4 whole-grain hot dog buns
Instructions
- Coarsely chop shrimp. Combine shrimp, mayonnaise, lemon juice, mustard, celery, green onion, and Old Bay seasoning in a bowl. Cover and chill until ready to serve.
- Serve lettuce (if using) and shrimp salad in buns.

- 2 pears, thinly sliced
- 2 kiwifruit, peeled and sliced
- 2 tsp fresh lemon juice
Side Dish Instructions
- Gently toss together pears, kiwifruit, and lemon juice.
