Shrimp Rolls

Ingredients

  • 1½ lb peeled and deveined, large cooked shrimp 
  • ¼ cup reduced-fat mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ cup chopped celery
  • 2 Tbsp chopped fresh parsley
  • ½ tsp Old Bay seasoning (or use paprika)
  • 8 Bibb lettuce leaves (optional)
  • 4 whole-grain hot dog buns

Instructions

  1. Coarsely chop shrimp. Combine shrimp, mayonnaise, lemon juice, mustard, celery, green onion, and Old Bay seasoning in a bowl. Cover and chill until ready to serve.
  2. Serve lettuce (if using) and shrimp salad in buns.

Side Dish Ingredients

  • 2 pears, thinly sliced
  • 2 kiwifruit, peeled and sliced
  • 2 tsp fresh lemon juice

Side Dish Instructions

  1. Gently toss together pears, kiwifruit, and lemon juice.
