Salisbury Steak with Mushroom Gravy

Ingredients
- 1½ lb ground round
- ½ cup panko breadcrumbs (preferably whole wheat)
- 3 Tbsp Worcestershire sauce, divided
- 1 Tbsp Dijon mustard
- 1 Tbsp organic tomato paste
- ½ tsp salt, divided
- ¾ tsp pepper, divided
- 2 Tbsp olive oil
- 1 onion, halved and sliced
- 1 (16-oz) pkg sliced mushrooms
- 2½ cups low-sodium beef broth
- 1 tsp arrowroot
Instructions
- Combine beef, panko, 2 Tbsp Worcestershire sauce, mustard, tomato paste, ¼ tsp salt, and ½ tsp pepper. Shape mixture into 6 patties.
- Heat oil in a large nonstick skillet over medium heat; brown patties 2 minutes per side. Remove from skillet; keep warm.
- Add onion and mushrooms to skillet; sauté 6 to 7 minutes or until browned and tender.
- Whisk together broth, 1 Tbsp Worcestershire, and arrowroot; add to onion mixture with ¼ tsp each salt and pepper.
- Return patties to skillet; cover and cook 5 minutes or until done.
Side Dish Ingredients
- 1½ lb organic red potatoes, cut into chunks
- 2 cloves garlic, sliced
- ½ cup low-sodium chicken broth
- ¼ cup olive oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 1½ lb broccoli crowns, cut into florets
Side Dish Instructions
- Preheat oven to 400°F. Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender. Drain; return potatoes and garlic to saucepan.
- Add broth, 2 Tbsp oil, and ½ tsp each salt and pepper to potatoes; mash with a potato masher to desired consistency.
- Meanwhile, toss broccoli with 2 Tbsp oil and ½ tsp each salt and pepper on a greased rimmed baking sheet.
- Roast 15 to 20 minutes or until browned and tender.
