Wasa Gluten Free Crispbread

Ingredients

  • 2 lb small red potatoes
  • 1 (11-oz) pkg mixed spring greens
  • 2 (12-oz) cans chunk light tuna in water, drained
  • 1 pint grape tomatoes
  • 6 hard-cooked eggs, halved
  • 1 (6-oz) can pitted black olives, drained
  • 1 cup gluten-free balsamic vinaigrette

Instructions

  1. Combine potatoes and water to cover in a large saucepan; bring to a boil, reduce heat, and simmer until potatoes are barely tender. Drain and cut into quarters.
  2. Divide greens among 6 plates. Top with potatoes, tuna, tomatoes, eggs, and olives. Serve with vinaigrette.
