Ingredients
- 2 lb small red potatoes
- 1 (11-oz) pkg mixed spring greens
- 2 (12-oz) cans chunk light tuna in water, drained
- 1 pint grape tomatoes
- 6 hard-cooked eggs, halved
- 1 (6-oz) can pitted black olives, drained
- 1 cup gluten-free balsamic vinaigrette
Instructions
- Combine potatoes and water to cover in a large saucepan; bring to a boil, reduce heat, and simmer until potatoes are barely tender. Drain and cut into quarters.
- Divide greens among 6 plates. Top with potatoes, tuna, tomatoes, eggs, and olives. Serve with vinaigrette.
