Skillet Lemon-Pepper Pork Medallions
Sour Cream Mashed Potatoes and Steamed Green BeansIngredients
- 2 (1-lb) pork tenderloins
- ⅓ cup all-purpose flour
- 1 Tbsp lemon-pepper seasoning
- 6 Tbsp butter, divided
- 3 Tbsp honey
Instructions
- Cut pork into 1-inch-thick slices. Pound slices to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Stir together flour and lemon-pepper in a shallow bowl; dredge pork in flour mixture.
- Melt 3 Tbsp butter in a large nonstick skillet over medium heat. Add pork, in batches, and cook 2 to 3 minutes per side or until done.
- Melt 3 Tbsp butter in microwave in a small bowl; whisk in honey. Pour over pork.

- 2 lb Yukon Gold potatoes, peeled and cut into 1-inch pieces
- ½ cup milk
- 1 (8-oz) carton sour cream
- 2 (12-oz) pkg trimmed green beans
Side Dish Instructions
- Bring potatoes and salted water to cover to a boil in a large Dutch oven. Reduce heat, and simmer 12 to 15 minutes or until potatoes are tender; drain and return to pot.
- Add milk and sour cream to pot; mash potatoes to desired consistency, and season with salt and pepper to taste.
- Cook green beans according to package directions; season with salt and pepper to taste.
