Pecan and Honey Roasted Salmon

Ingredients

  • ¾ lb salmon fillet
  • 1 Tbsp butter, melted
  • ½ Tbsp whole-grain Dijon mustard
  • ½ Tbsp honey
  • ¼ cup finely chopped pecans

Instructions

  1. Preheat oven to 425°F. Place salmon on a lightly greased foil-lined baking sheet.
  2. Stir together butter, mustard, and honey; spread over fish. Sprinkle with nuts, and cook 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (5.4-oz) pkg wild mushroom and herb couscous
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Prepare couscous according to package directions. Serve half of couscous; reserve remaining couscous for another meal.
  2. Steam green beans according to package directions.
