French Onion Grilled Cheese

Watermelon and Tomato Salad

Ingredients

  • 1½ tsp olive oil
  • 1½ Tbsp butter, divided
  • 1 onion, thinly sliced
  • 1½ tsp organic brown sugar
  • 1½ tsp vegan balsamic vinegar
  • 3 slices Swiss cheese
  • 6 slices organic sourdough bread

Instructions

  1. Heat oil and ½ Tbsp butter in a large skillet over medium-low heat; add onion, and sprinkle with sugar.
  2. Cook 20 minutes until deep golden brown, stirring occasionally. Drizzle with vinegar. If desired, season with salt and pepper to taste.
  3. Layer cheese and onion on 3 bread slices; top with remaining 3 bread slices.
  4. Melt 1 Tbsp butter in a large skillet. Place sandwiches in skillet; cook 2 to 3 minutes per side until cheese melts.

Side Dish Ingredients

  • 2 cups chopped watermelon
  • 2 heirloom tomatoes, chopped
  • ½ (0.5-oz) pkg fresh basil, thinly sliced
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together watermelon, tomatoes, basil, and vinaigrette. Let stand 20 minutes, tossing occasionally.
