Two-Tomato Tortellini
Parmesan-Garlic Ciabatta ToastIngredients
- 1 (9-oz) pkg refrigerated whole wheat three-cheese tortellini
- 1 large shallot, thinly sliced
- 1½ Tbsp olive oil, divided
- ½ pint grape tomatoes
- ¼ tsp salt
- ⅛ tsp pepper
- 1 Tbsp vegan balsamic vinegar
- 1 large tomato, chopped
- ½ (0.5-oz) pkg fresh basil, thinly sliced
Instructions
- Cook tortellini according to package directions.
- Meanwhile, sauté shallot in 1 Tbsp hot oil in a large skillet over medium-high heat 3 minutes or until tender. Add grape tomatoes, salt, and pepper; cook 4 to 5 minutes or until tomatoes begin to burst and brown.
- Stir in tortellini, vinegar, and chopped tomato; cook 2 minutes. Sprinkle with basil; drizzle with ½ Tbsp oil.
Side Dish Ingredients
- 2 tsp olive oil
- 1 clove garlic, sliced
- 1 ciabatta roll, split
- 3 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 450°F. Heat oil with garlic in a small skillet over low heat. Remove from heat; let stand 5 minutes. Discard garlic.
- Brush flavored oil on cut sides of bread on a baking sheet; top with cheese. Bake just until cheese begins to brown.
