Citrus-Nut Salad
Crusty French Baguette
Ingredients
- 1 (9-oz) pkg romaine salad
- ½ head fennel, cored and slices (about 1 cup)
- ½ cup sliced almonds
- ⅓ cup lightly salted pistachios, chopped
- 1 mango, peeled and sliced
- 1 small grapefruit, sectioned
- 1 orange, sectioned
- 1 avocado, diced
- ¼ cup vegan olive oil vinaigrette
Instructions
- Toss together romaine, fennel, both nuts, mango, grapefruit, orange, and avocado in a large bowl.
- Drizzle desired amount of vinaigrette over salad, and gently toss.

Side Dish Instructions
- Preheat oven to 400°F. Wrap baguette in foil.
- Bake 8 to 10 minutes or until crispy. Slice to serve.
