Citrus-Nut Salad

Ingredients

  • 1 (9-oz) pkg romaine salad
  • ½ head fennel, cored and slices (about 1 cup)
  • ½ cup sliced almonds
  • ⅓ cup lightly salted pistachios, chopped
  • 1 mango, peeled and sliced
  • 1 small grapefruit, sectioned
  • 1 orange, sectioned
  • 1 avocado, diced
  • ¼ cup vegan olive oil vinaigrette

Instructions

  1. Toss together romaine, fennel, both nuts, mango, grapefruit, orange, and avocado in a large bowl.
  2. Drizzle desired amount of vinaigrette over salad, and gently toss.

  • ½ (12-oz) French baguette

Side Dish Instructions

  1. Preheat oven to 400°F. Wrap baguette in foil.
  2. Bake 8 to 10 minutes or until crispy. Slice to serve.
