Honey Barbecue Meat Loaf
Easy Potato Casserole and Steamed PeasIngredients
- 1½ lb ground beef
- ¾ cup panko breadcrumbs
- 1 large egg
- 2 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- 5 Tbsp barbecue sauce, divided
- 1 Tbsp honey
Instructions
- Preheat oven to 350°F. Stir together beef, panko, egg, Worcestershire, Dijon, and 3 Tbsp barbecue sauce; shape mixture into a 9- x 5-inch loaf on a rimmed baking sheet lined with foil.
- Stir together 2 Tbsp barbecue sauce and honey spread over top of loaf.
- Bake 45 minutes to 1 hour or until no longer pink in center. Let stand 10 minutes before slicing.
Side Dish Ingredients
- 2 (24-oz) pkg refrigerated mashed potatoes
- 1 (8-oz) carton sour cream
- 1 (8-oz) pkg shredded sharp Cheddar cheese
- ¼ cup butter, softened
- 1 (15-oz) pkg frozen peas
Side Dish Instructions
- Preheat oven to 350°F.
- Heat potatoes according to package directions; spoon into a large bowl. Stir in sour cream, cheese, and butter. Season with salt and pepper to taste.
- Spoon into a greased 2-quart baking dish. Bake 30 minutes or until hot and bubbly.
- Steam peas according to package directions.
