Honey Barbecue Meat Loaf

Ingredients

  • 1½ lb ground beef
  • ¾ cup panko breadcrumbs
  • 1 large egg
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 5 Tbsp barbecue sauce, divided
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 350°F. Stir together beef, panko, egg, Worcestershire, Dijon, and 3 Tbsp barbecue sauce; shape mixture into a 9- x 5-inch loaf on a rimmed baking sheet lined with foil.
  2. Stir together 2 Tbsp barbecue sauce and honey spread over top of loaf.
  3. Bake 45 minutes to 1 hour or until no longer pink in center. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) pkg shredded sharp Cheddar cheese
  • ¼ cup butter, softened
  • 1 (15-oz) pkg frozen peas

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Heat potatoes according to package directions; spoon into a large bowl. Stir in sour cream, cheese, and butter. Season with salt and pepper to taste.
  3. Spoon into a greased 2-quart baking dish. Bake 30 minutes or until hot and bubbly.
  4. Steam peas according to package directions.
