Hoisin-Ginger Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ⅓ cup hoisin sauce
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp lime juice
  • ½ tsp ground ginger
  • 3 cloves garlic, minced

Instructions

  1. Place chicken in a greased 5- to 6-quart slow cooker.
  2. Whisk together hoisin sauce, soy sauce, lime juice, ginger, and garlic; pour over chicken.
  3. Cover and cook on LOW 5 to 6 hours or until chicken is done.

Side Dish Ingredients

  • 1 (3-oz) pkg chicken- or beef-flavored ramen noodles
  • ⅓ cup olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup sliced green onions
  • 2 Tbsp sugar
  • 2 Tbsp butter
  • ½ cup slivered almonds
  • 1 (12-oz) pkg broccoli slaw

Side Dish Instructions

  1. Crush ramen noodles in bag into about 1-inch pieces.
  2. Whisk together seasoning packet from ramen noodles, oil, vinegar, green onions, and sugar in a large bowl.
  3. Melt butter in a large skillet over medium-low heat. Add ramen noodles and nuts; sauté 2 to 3 minutes or until toasted. Transfer to mixture in bowl. Add broccoli slaw; toss.
  4. Refrigerate until ready to serve.
