Cranberry-Orange Pork Chops
Baked Sweet Potatoes and AsparagusIngredients
- 6 bone-in pork chops (about 2½ lb)
 - ½ tsp salt
 - ½ tsp pepper
 - ½ red onion, thinly sliced
 - 1 (14-oz) can whole berry cranberry sauce
 - ½ cup fresh orange juice
 
Instructions
- Sprinkle pork with salt and pepper. Place pork in a greased 5- to 7-quart slow cooker; top with onion.
 - Whisk together cranberry sauce and orange juice. Pour over pork and onions in cooker.
 - Cover and cook on LOW 6 to 7 hours or until tender.
 
Side Dish Ingredients
- 6 sweet potatoes
 - 3 Tbsp butter
 - ½ tsp salt, divided
 - ½ tsp pepper, divided
 - 2 (10-oz) pkg asparagus
 - 2 Tbsp olive oil
 
Side Dish Instructions
- Preheat oven to 400°F.
 - Prick potatoes with a fork, and place on a large rimmed baking sheet. Bake 1 hour or until tender. Top with butter and ¼ tsp each salt and pepper.
 - Toss together asparagus, oil, and ¼ tsp each salt and pepper. Add to oven with potatoes. Bake 15 minutes or until lightly browned and tender.
