Beef and Blue Pizza

Ingredients

  • 2 (12-inch) prebaked pizza crusts
  • 3 Tbsp olive oil
  • 2 cups reserved shredded beef mixture (from Sunday Roast with Gravy recipe)
  • 1 (4-oz) pkg crumbled blue cheese (or use feta cheese)
  • 1 large tomato, seeded and chopped
  • ½ red onion, thinly sliced
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Place crusts on a large rimmed baking sheet. Brush with oil.
  2. Top with shredded beef mixture, blue cheese, tomato, onion, and mozzarella cheese.
  3. Bake 12 to 15 minutes or until cheese melts and crust is crisp.

Side Dish Ingredients

  • 1 (10-oz) pkg Italian salad mix
  • 1 large tomato, seeded and chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
