Open-Faced Chicken Parmesan Sandwiches
Buttery Green Beans
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ½ (24-oz) jar pasta sauce
- 1 cup shredded mozzarella cheese
- ½ (16-oz) loaf garlic bread
- ¼ cup grated Parmesan cheese (from a can)
Instructions
- Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Add pasta sauce to skillet, and cook until thoroughly heated.
- Sprinkle chicken with mozzarella; cover, and cook 1 minute or until cheese is melted.
- Meanwhile, bake garlic bread according to package directions; cut into 2 pieces, and divide among 2 plates.
- Top bread pieces with saucy chicken; sprinkle with Parmesan.

- ½ (12-oz) pkg steam-in-bag green beans
- 1 Tbsp butter
Side Dish Instructions
- Cook green beans according to package directions.
- Toss green beans with butter in a serving bowl; season with salt and pepper to taste.
