Jerk Cauliflower Steaks
Curried Pineapple Rice SaladIngredients
- 1 head cauliflower
- 1½ Tbsp olive oil, divided
- 3½ Tbsp orange juice, divided
- 1 Tbsp salt-free Jamaican Jerk seasoning
- ½ tsp and ⅛ tsp garlic salt, divided
- 1 shallot, minced
- ½ (16-oz) pkg chopped kale
- ¼ cup fresh cilantro leaves, minced
- 3 Tbsp vegan sour cream
- 1 tsp vegan white wine vinegar
- ¼ tsp ground cumin
- ⅛ tsp agave nectar
Instructions
- Preheat oven to 450°F. Cut cauliflower lengthwise into ¾-inch-thick slabs. (Some pieces will crumble). Arrange in a single layer on a large rimmed baking sheet coated with cooking spray.
- Combine 1 Tbsp oil and 1 Tbsp orange juice in a small bowl. Combine seasoning and ¼ tsp garlic salt in another small bowl. Brush both sides of cauliflower with oil mixture; sprinkle with seasoning mixture.
- Bake 25 to 30 minutes or until browned and tender, turning once.
- Meanwhile, cook shallot and kale in ½ Tbsp hot oil in a Dutch oven over medium heat, stirring constantly, 8 to 10 minutes or until kale is wilted and tender. Stir in 1½ Tbsp orange juice and ¼ tsp garlic salt.
- Whisk together cilantro, sour cream, 1 Tbsp orange juice, ½ Tbsp oil, vinegar, ⅛ tsp garlic salt, cumin, and agave in a medium bowl until smooth. Serve sauce on side with cauliflower steaks and kale.

- 1 (3.5-oz) pouch boil-in-bag brown rice
- 1 tsp curry powder
- 1½ tsp low-sodium soy sauce
- ½ red bell pepper, diced
- 1 clove garlic, minced
- 1½ tsp olive oil
- ½ cup pineapple chunks, drained
- 1 green onion, chopped
Side Dish Instructions
- Cook rice according to package directions; stir in curry powder and soy sauce.
- Meanwhile, cook bell pepper and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until just tender. Remove from heat. Stir in rice mixture, pineapple, and onion.
