Lemon-Garlic Grilled Chicken

Ingredients
- 2 lemons
- ⅓ cup chopped fresh parsley
- 2 Tbsp Dijon mustard
- 2 cloves garlic, minced
- 6 (6-oz) boneless, skinless chicken breasts
Instructions
- Preheat grill to medium-high heat. Grate zest and squeeze juice from lemons. Whisk together lemon zest, lemon juice, parsley, mustard, and garlic. Rub mixture on chicken.
- Grill chicken, covered with grill lid, 6 to 8 minutes per side or until done.
Side Dish Ingredients
- 3 romaine lettuce hearts, halved lengthwise
- 1½ lb asparagus, trimmed
- 3 Tbsp olive oil, divided
- 1½ Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat grill or grill pan to medium-high. Lightly coat romaine with cooking spray. Grill romaine, without grill lid, 2 minutes per side or until grill marks appear; remove from grill.
- Grill asparagus 2 to 4 minutes; toss asparagus with 1 Tbsp oil.
- Whisk together 2 Tbsp oil, lemon juice, salt, and pepper. Drizzle over romaine, and sprinkle with cheese.
