Lemon-Garlic Grilled Chicken

Grilled Romaine and Parmesan Asparagus

Ingredients

  • 2 lemons
  • ⅓ cup chopped fresh parsley
  • 2 Tbsp Dijon mustard
  • 2 cloves garlic, minced 
  • 6 (6-oz) boneless, skinless chicken breasts

Instructions

  1. Preheat grill to medium-high heat. Grate zest and squeeze juice from lemons. Whisk together lemon zest, lemon juice, parsley, mustard, and garlic. Rub mixture on chicken.
  2. Grill chicken, covered with grill lid, 6 to 8 minutes per side or until done.

Side Dish Ingredients

  • 3 romaine lettuce hearts, halved lengthwise
  • 1½ lb asparagus, trimmed
  • 3 Tbsp olive oil, divided
  • 1½ Tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high. Lightly coat romaine with cooking spray. Grill romaine, without grill lid, 2 minutes per side or until grill marks appear; remove from grill.
  2. Grill asparagus 2 to 4 minutes; toss asparagus with 1 Tbsp oil.
  3. Whisk together 2 Tbsp oil, lemon juice, salt, and pepper. Drizzle over romaine, and sprinkle with cheese.
