Asian Chicken and Kale Stir-Fry

Ingredients

  • 1 lb ground chicken (or use ground turkey)
  • 1½ Tbsp sesame oil
  • ½ bunch lacinato kale, chopped
  • 2 small carrots, thinly sliced
  • 1 clove garlic, minced
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 tsp minced ginger
  • ⅛ tsp crushed red pepper
  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • 1 green onion, sliced

Instructions

  1. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned.
  2. Add kale, carrots, and garlic; sauté 5 minutes or until vegetables are almost tender.
  3. Stir together soy sauce, vinegar, honey, ginger, and red pepper; add to mixture in skillet, and simmer 3 minutes or until sauce is thickened.
  4. Meanwhile, cook rice according to package directions.
  5. Serve chicken mixture over rice, and sprinkle with onion.
