Ingredients

  • 1½ lb ground chicken
  • ¾ cup Italian panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 6 (1-oz) slices mozzarella cheese
  • 6 hamburger buns
  • 2 (0.5-oz) pkg fresh basil
  • 1½ cups marinara sauce, heated

Instructions

  1. Combine chicken, panko, Parmesan, and garlic in a bowl; shape mixture into 6 patties.
  2. Cook patties in a large cast-iron or nonstick skillet over medium heat 5 to 6 minutes per side or until done. Top with mozzarella; cover and cook 1 minute or until cheese melts.
  3. Serve burgers on buns with basil and marinara sauce.

  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 (6-oz) pkg baby spinach

  1. Whisk together oil, lemon juice, mustard, salt, and pepper in a large bowl. Add spinach; toss.
