Chicken Parmesan Burgers

Ingredients
- 1½ lb ground chicken
- ¾ cup Italian panko breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 6 (1-oz) slices mozzarella cheese
- 6 hamburger buns
- 2 (0.5-oz) pkg fresh basil
- 1½ cups marinara sauce, heated
Instructions
- Combine chicken, panko, Parmesan, and garlic in a bowl; shape mixture into 6 patties.
- Cook patties in a large cast-iron or nonstick skillet over medium heat 5 to 6 minutes per side or until done. Top with mozzarella; cover and cook 1 minute or until cheese melts.
- Serve burgers on buns with basil and marinara sauce.

- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp Dijon mustard
- ¼ tsp kosher salt
- ¼ tsp pepper
- 2 (6-oz) pkg baby spinach
