Lemon-Garlic Grilled Chicken
Grilled Romaine and Parmesan AsparagusIngredients
- 1 lemon
- 3 Tbsp chopped fresh parsley
- 1 Tbsp Dijon mustard
- 1 clove garlic, minced
- 3 (6-oz) boneless, skinless chicken breasts
Instructions
- Preheat grill to medium-high heat. Grate zest and squeeze juice from lemon. Whisk together lemon zest, lemon juice, parsley, mustard, and garlic. Rub mixture on chicken.
- Grill chicken, covered with grill lid, 6 to 8 minutes per side or until done.
Side Dish Ingredients
- 3 romaine lettuce heart halves
- ¾ lb asparagus, trimmed
- 1½ Tbsp olive oil, divided
- 2 tsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Lightly coat lettuce with cooking spray. Grill lettuce, without grill lid, 2 minutes per side or until grill marks appear; remove from grill.
- Grill asparagus 2 to 4 minutes; toss asparagus with ½ Tbsp oil.
- Whisk together 1 Tbsp oil, lemon juice, salt, and pepper. Drizzle over lettuce, and sprinkle with cheese.
