Lemon-Garlic Grilled Chicken

Grilled Romaine and Parmesan Asparagus

Ingredients

  • 1 lemon
  • 3 Tbsp chopped fresh parsley
  • 1 Tbsp Dijon mustard
  • 1 clove garlic, minced 
  • 3 (6-oz) boneless, skinless chicken breasts

Instructions

  1. Preheat grill to medium-high heat. Grate zest and squeeze juice from lemon. Whisk together lemon zest, lemon juice, parsley, mustard, and garlic. Rub mixture on chicken.
  2. Grill chicken, covered with grill lid, 6 to 8 minutes per side or until done.

Side Dish Ingredients

  • 3 romaine lettuce heart halves 
  • ¾ lb asparagus, trimmed
  • 1½ Tbsp olive oil, divided
  • 2 tsp lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Lightly coat lettuce with cooking spray. Grill lettuce, without grill lid, 2 minutes per side or until grill marks appear; remove from grill.
  2. Grill asparagus 2 to 4 minutes; toss asparagus with ½ Tbsp oil.
  3. Whisk together 1 Tbsp oil, lemon juice, salt, and pepper. Drizzle over lettuce, and sprinkle with cheese.
