Ingredients

  • ½ cup apple cider vinegar
  • 1 Tbsp honey
  • 1½ tsp kosher salt
  • 1 red onion, thinly sliced
  • ¼ cup reduced-fat mayonnaise
  • 4 (1.6-oz) 100% whole wheat hot dog buns
  • ½ lb thinly sliced low-sodium roast beef
  • 2 cups arugula
  • 1 small carrot, grated
  • ¼ cup crumbled blue cheese

Instructions

  1. Combine vinegar, honey, and salt; add onion. Let stand at room temperature 1 hour. Drain.
  2. Spread mayonnaise inside hot dog buns; fill buns with roast beef, arugula, carrot, onions, and blue cheese.

  • ¼ cup torn fresh mint
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey
