Roast Beef and Blue Cheese Sandwiches
Mint-Honeydew SaladIngredients
- ½ cup apple cider vinegar
- 1 Tbsp honey
- 1½ tsp kosher salt
- 1 red onion, thinly sliced
- ¼ cup reduced-fat mayonnaise
- 4 (1.6-oz) 100% whole wheat hot dog buns
- ½ lb thinly sliced low-sodium roast beef
- 2 cups arugula
- 1 small carrot, grated
- ¼ cup crumbled blue cheese
Instructions
- Combine vinegar, honey, and salt; add onion. Let stand at room temperature 1 hour. Drain.
- Spread mayonnaise inside hot dog buns; fill buns with roast beef, arugula, carrot, onions, and blue cheese.

- 2 cups cubed honeydew
- ¼ cup torn fresh mint
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
