Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower
  • 1 (8.5-oz) pkg microwavable quinoa and brown rice
  • 2 cups shredded rotisserie chicken
  • 1 (8-oz) pkg shredded lettuce
  • 1 pint mulitcolored cherry tomatoes, halved
  • 1 English cucumber, cut into bite-size pieces
  • 1 avocado, sliced
  • ¼ cup Sriracha mayonnaise
  • ¼ cup fresh cilantro leaves

Instructions

  1. Microwave cauliflower rice and quinoa according to package directions; toss together in a bowl.
  2. Divide cauliflower rice mixture, chicken, lettuce, tomatoes, cucumber, and avocado among 4 bowls; drizzle each with mayonnaise, and sprinkle with cilantro.
