Cucumber Rounds and Red Grapes

Ingredients

  • 2 Tbsp light butter with canola oil
  • 8 (1-oz) slices whole wheat sandwich bread
  • 6 Tbsp natural creamy peanut butter
  • 1 cup raspberries, smashed
  • 6 Tbsp reduced-sugar raspberry preserves

Instructions

  1. Spread light butter over one side of each bread slice. Spread peanut butter and preserves over unbuttered sides of bread slices; layer 4 bread slices with raspberries.
  2. Press bread slices together to make sandwiches. Cook sandwiches, in batches, in a large griddle or nonstick skillet over medium heat 2 to 3 minutes per side or browned.

  • 1 English cucumber, sliced
  • 1⅓ cups seedless red grapes

Side Dish Instructions

  1. Serve cucumber and grapes with sandwiches.
