Not-Your-Mom's PB & J Sandwiches
Cucumber Rounds and Red GrapesIngredients
- 2 Tbsp light butter with canola oil
- 8 (1-oz) slices whole wheat sandwich bread
- 6 Tbsp natural creamy peanut butter
- 1 cup raspberries, smashed
- 6 Tbsp reduced-sugar raspberry preserves
Instructions
- Spread light butter over one side of each bread slice. Spread peanut butter and preserves over unbuttered sides of bread slices; layer 4 bread slices with raspberries.
- Press bread slices together to make sandwiches. Cook sandwiches, in batches, in a large griddle or nonstick skillet over medium heat 2 to 3 minutes per side or browned.

- 1 English cucumber, sliced
- 1⅓ cups seedless red grapes

- Serve cucumber and grapes with sandwiches.
