Sausage-Arugula Quiche

Ingredients

  • 1 (12-oz) pkg ground Italian pork sausage
  • 1 Tbsp olive oil
  • 1 (5-oz) pkg arugula
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 1 Tbsp Dijon mustard
  • ½ tsp garlic salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly.
  2. Add arugula; cook 1 to 2 minutes or until wilted. Remove from heat; cool 5 minutes.
  3. Spread sausage mixture in bottom of a greased 9-inch pie plate; top with cheese.
  4. Whisk together eggs, mustard, garlic salt, and pepper. Pour over sausage mixture in pie plate.
  5. Place pie plate on a rimmed baking sheet. Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.
