French Toast Waffles with Cherries

Ingredients

  • 4 large eggs
  • ½ cup 1% low-fat milk
  • 1 Tbsp light brown sugar
  • 1½ tsp pure vanilla extract
  • ¼ tsp salt
  • 8 (1-oz) slices whole wheat sandwich bread
  • ¾ cup pitted halved cherries
  • 1 (6-oz) carton low-fat cherry yogurt (or use vanilla)

Instructions

  1. Preheat waffle iron. Whisk together eggs, milk, sugar, vanilla, and salt in a large bowl until well blended.
  2. Dip both sides of bread in egg mixture. Cook bread, in batches, in waffle iron 2 to 3 minutes or until golden brown. Serve cherries and yogurt over waffles.
