Ginger-Soy Steak Skewers
Sesame Bok Choy
Ingredients
- ½ cup olive oil
- ½ cup gluten-free soy sauce
- ¼ cup rice vinegar
- 3 Tbsp ginger paste (or use ¾ tsp ground ginger)
- 2 Tbsp lime juice
- 1½ Tbsp minced garlic
- ½ tsp crushed red pepper
- 2 lb skirt steak, cut into thin strips
- 2 Tbsp toasted sesame seeds
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together oil, soy sauce, vinegar, ginger paste, lime juice, garlic, and red pepper in a large zip-top plastic bag; add beef. Let stand 10 minutes while grill preheats.
- Remove beef from marinade; discard marinade. Thread beef onto metal or bamboo skewers.
- Grill, covered, 4 minutes per side or to desired doneness. Sprinkle with sesame seeds.
Side Dish Ingredients
- ¼ cup dark sesame oil
- 3 Tbsp gluten-free soy sauce
- 2 Tbsp rice vinegar
- 6 heads baby bok choy, halved
Side Dish Instructions
- Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook, in 2 batches, in a large nonstick skillet over medium-high heat until tender. Season with salt and pepper to taste.
