Ginger-Soy Steak Skewers

Ingredients

  • ½ cup olive oil
  • ½ cup gluten-free soy sauce
  • ¼ cup rice vinegar
  • 3 Tbsp ginger paste (or use ¾ tsp ground ginger)
  • 2 Tbsp lime juice
  • 1½ Tbsp minced garlic
  • ½ tsp crushed red pepper
  • 2 lb skirt steak, cut into thin strips
  • 2 Tbsp toasted sesame seeds

Instructions

  1. Preheat grill or grill pan to medium-high heat. Whisk together oil, soy sauce, vinegar, ginger paste, lime juice, garlic, and red pepper in a large zip-top plastic bag; add beef. Let stand 10 minutes while grill preheats.
  2. Remove beef from marinade; discard marinade. Thread beef onto metal or bamboo skewers.
  3. Grill, covered, 4 minutes per side or to desired doneness. Sprinkle with sesame seeds.

Side Dish Ingredients

  • ¼ cup dark sesame oil
  • 3 Tbsp gluten-free soy sauce
  • 2 Tbsp rice vinegar
  • 6 heads baby bok choy, halved

Side Dish Instructions

  1. Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook, in 2 batches, in a large nonstick skillet over medium-high heat until tender. Season with salt and pepper to taste.
