Lemon-Caper Shrimp

Ingredients

  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 lb peeled and deveined, large raw shrimp
  • 3 Tbsp capers
  • 3 Tbsp fresh lemon juice

Instructions

  1. Sauté garlic in hot oil in a large skillet 1 minute. Add shrimp, capers, and lemon juice; sauté 3 minutes or until shrimp turn pink.

  • 6 oz orzo (1 cup)
  • 2 cups frozen green peas
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 lemon
  • 1 cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook peas and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until peas are tender.
  3. Grate zest and squeeze juice from lemon. Add lemon zest, lemon juice, pasta, and cheese to peas in skillet; toss to combine.
