Grilled Maple-Turmeric Chicken Thighs

Ingredients

  • 2 Tbsp ground turmeric 
  • 1½ Tbsp curry powder
  • 1 Tbsp olive oil
  • ½ Tbsp maple syrup (see Note)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 lb bone-in, skinless chicken thighs

Instructions

  1. Preheat grill to medium-high heat. Combine turmeric, curry powder, oil, maple syrup, salt, and pepper. Brush on chicken. Grill 5 to 8 minutes per side or until done.

Side Dish Ingredients

  • 1 (15-oz) can chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 5 Tbsp extra virgin olive oil, divided
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 Tbsp honey
  • 1 Tbsp fresh lemon juice
  • 2 tsp curry powder

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together chickpeas, vegetables, 2 Tbsp oil and ¼ tsp each salt and pepper on a large rimmed baking sheet. Roast 15 minutes or until crisp-tender.
  2. Meanwhile, combine 3 Tbsp oil, honey, lemon juice, curry powder, and ¼ tsp each salt and pepper in a bowl. Add chickpeas and vegetables; toss.
