Grilled Maple-Turmeric Chicken Thighs
Spiced Chickpeas and VegetablesIngredients
- 2 Tbsp ground turmeric
- 1½ Tbsp curry powder
- 1 Tbsp olive oil
- ½ Tbsp maple syrup (see Note)
- ½ tsp salt
- ½ tsp pepper
- 2 lb bone-in, skinless chicken thighs
Instructions
- Preheat grill to medium-high heat. Combine turmeric, curry powder, oil, maple syrup, salt, and pepper. Brush on chicken. Grill 5 to 8 minutes per side or until done.
Side Dish Ingredients
- 1 (15-oz) can chickpeas, drained and rinsed
- 2 cups broccoli florets
- 1 cup cauliflower florets
- 5 Tbsp extra virgin olive oil, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp honey
- 1 Tbsp fresh lemon juice
- 2 tsp curry powder
Side Dish Instructions
- Preheat oven to 400°F. Toss together chickpeas, vegetables, 2 Tbsp oil and ¼ tsp each salt and pepper on a large rimmed baking sheet. Roast 15 minutes or until crisp-tender.
- Meanwhile, combine 3 Tbsp oil, honey, lemon juice, curry powder, and ¼ tsp each salt and pepper in a bowl. Add chickpeas and vegetables; toss.
