Broccoli and Carrot Medley

Ingredients

  • 1 (16-oz) pkg whole-grain elbow macaroni
  • 6 Tbsp butter, divided
  • ¼ cup whole wheat flour
  • 4 cups milk
  • 1 (8-oz) block sharp Cheddar cheese, shredded
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups panko breadcrumbs (preferably whole wheat)
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Melt ¼ cup butter in a saucepan over medium heat. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk, stirring constantly, 3 to 5 minutes or until thickened.
  3. Stir in Cheddar, salt, and pepper until smooth; add pasta.
  4. Melt 2 Tbsp butter in microwave at HIGH 30 seconds. Combine melted butter, panko, and Parmesan.
  5. Pour pasta mixture into a greased 13- x 9-inch baking dish; top with panko mixture.
  6. Bake 30 to 35 minutes or until top is golden.

  • 1 lb broccoli, cut into florets
  • 3 carrots, sliced
  • 1 cup organic low-sodium vegetable broth
  • 1 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring all ingredients to a boil in a saucepan over medium-high heat. Reduce heat, cover, and simmer 7 minutes or until vegetables are tender. Drain.
