Maple-Glazed Grilled Sausages
Peach, Blue Cheese, and Almond SaladIngredients
- 2 zucchini, cut into 2-inch chunks
- 2 bell peppers, cut into 2-inch chunks
- 1 (16-oz) pkg whole mushrooms
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 6 fully cooked spinach and feta chicken-turkey sausage links
- ¼ cup pure maple syrup
Instructions
- Preheat grill to medium-high heat. Thread zucchini, bell peppers, and mushrooms onto metal or bamboo skewers; stir together oil and vinegar.
- Place sausages and kabobs on a grill rack coated with cooking spray.
- Grill sausages, covered, 8 to 10 minutes, turning occasionally and basting with maple syrup.
- Grill kabobs 8 to 10 minutes, turning occasionally, and basting with oil and vinegar.
Side Dish Ingredients
- ½ cup sliced almonds
- 1 (10-oz) pkg mixed baby greens
- 3 organic peaches, pitted and cut into wedges
- ¼ cup organic lemon-garlic dressing
- 2 oz blue cheese, crumbled
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant; cool.
- Combine greens and peaches in a bowl. Pour dressing over salad; toss. Top with nuts and cheese.
