Grilled Sausage-Stuffed Zucchini
Grilled Sweet Potato and Mixed Greens SaladIngredients
- 6 large zucchini, halved lengthwise
- 1¼ lb ground mild Italian sausage
- 1 (14.5-oz) can BPA-free no-salt-added fire-roasted diced tomatoes, drained
- 2 cloves garlic, minced
- ½ cup freshly grated Parmesan cheese, divided
Instructions
- Preheat grill to low heat. Scoop out seeds from each zucchini half using a spoon.
- Cook sausage in a large skillet over medium-high heat until browned and crumbly; drain.
- Combine sausage, tomatoes, garlic, and ½ cup cheese in a medium bowl. Spoon mixture into each zucchini half, pressing to fill evenly; sprinkle tops with remaining ¼ cup cheese.
- Grill, covered, 15 to 20 minutes or until zucchini is tender.
Side Dish Ingredients
- 3 sweet potatoes
- 1 Tbsp olive oil
- 1 Tbsp honey
- Pinch of salt
- ½ tsp pepper
- ½ tsp ground cinnamon
- 1 (10-oz) pkg spring mix
- ½ cup chopped walnuts
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Preheat grill to medium-high heat. Pierce potatoes with a fork. Microwave at HIGH 5 minutes or until almost tender; cool slightly.
- Cut potatoes into wedges; drizzle with oil and honey. Sprinkle with salt, pepper, and cinnamon. Toss.
- Grill, covered, 6 to 8 minutes or until tender. Combine potatoes, salad greens, nuts, and vinaigrette just before serving.
