Grilled Sausage-Stuffed Zucchini

Grilled Sweet Potato and Mixed Greens Salad

Ingredients

  • 6 large zucchini, halved lengthwise
  • 1¼ lb ground mild Italian sausage
  • 1 (14.5-oz) can BPA-free no-salt-added fire-roasted diced tomatoes, drained
  • 2 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese, divided

Instructions

  1. Preheat grill to low heat. Scoop out seeds from each zucchini half using a spoon.
  2. Cook sausage in a large skillet over medium-high heat until browned and crumbly; drain.
  3. Combine sausage, tomatoes, garlic, and ½ cup cheese in a medium bowl. Spoon mixture into each zucchini half, pressing to fill evenly; sprinkle tops with remaining ¼ cup cheese.
  4. Grill, covered, 15 to 20 minutes or until zucchini is tender.

Side Dish Ingredients

  • 3 sweet potatoes
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • Pinch of salt
  • ½ tsp pepper
  • ½ tsp ground cinnamon
  • 1 (10-oz) pkg spring mix
  • ½ cup chopped walnuts
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Preheat grill to medium-high heat. Pierce potatoes with a fork. Microwave at HIGH 5 minutes or until almost tender; cool slightly.
  2. Cut potatoes into wedges; drizzle with oil and honey. Sprinkle with salt, pepper, and cinnamon. Toss.
  3. Grill, covered, 6 to 8 minutes or until tender. Combine potatoes, salad greens, nuts, and vinaigrette just before serving.
