Cheesy Firecracker Chicken
Cilantro Lime Rice and Black BeansIngredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 cup Buffalo wing sauce
- 6 slices pepper-Jack cheese
- 2 avocados, thinly sliced
- 2 tomatoes, chopped
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium heat until browned, basting with Buffalo sauce during last 3 minutes of cooking.
- Top each piece of chicken with cheese; let stand until melted. Top with avocado and tomatoes.

- 1½ cups long-grain white rice
- ¼ cup chopped fresh cilantro
- 1 Tbsp lime zest
- 2 (15-oz) cans black beans, drained and rinsed
Side Dish Instructions
- Cook rice according to package directions; stir in cilantro and lime zest. Season with salt and pepper to taste.
- Heat beans according to package directions.
