Cheesy Firecracker Chicken

Cilantro Lime Rice and Black Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 cup Buffalo wing sauce
  • 6 slices pepper-Jack cheese
  • 2 avocados, thinly sliced
  • 2 tomatoes, chopped

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium heat until browned, basting with Buffalo sauce during last 3 minutes of cooking.
  3. Top each piece of chicken with cheese; let stand until melted. Top with avocado and tomatoes.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime zest
  • 2 (15-oz) cans black beans, drained and rinsed

Side Dish Instructions

  1. Cook rice according to package directions; stir in cilantro and lime zest. Season with salt and pepper to taste.
  2. Heat beans according to package directions.
