Grilled Salmon Skewers
Grilled Asparagus with Lime VinaigretteIngredients
- 2 Tbsp avocado oil
- 2 yellow bell peppers, cut into 1-inch pieces
- 2 red onions, cut into small wedges
- 1 pint grape tomatoes
- 2 lb salmon fillets, cut into 1-inch pieces (or use mahi mahi)
- ½ tsp garlic salt
- ½ tsp lemon-pepper seasoning
Instructions
- Preheat grill to medium-high heat. Toss together oil, bell peppers, onions, and tomatoes in a bowl.
- Alternately thread fish, bell peppers, onions, and tomatoes onto 12 metal skewers. Sprinkle skewers with garlic salt and lemon-pepper.
- Grill skewers, covered, on a grill rack rubbed with oil 4 to 6 minutes per side or until fish flakes with a fork.
Side Dish Ingredients
- 2 lb asparagus, trimmed
- 2 Tbsp fresh lime juice
- 1 tsp lime zest
- 1 Tbsp extra virgin olive oil
- ¼ tsp garlic salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Grill asparagus, covered, on a grill rack rubbed with avocado oil 4 minutes or until tender, turning occasionally. Cut asparagus into 1-inch pieces.
- Whisk together lime juice, zest, oil, garlic salt, and pepper in a bowl; add asparagus, and toss.
