Ground Turkey Picadillo
Blue Cheese Chopped Salad and Tortilla Chips
Ingredients
- 1½ lb ground turkey
- ¼ cup chicken broth
- 1 Tbsp apple cider vinegar
- 1 Tbsp minced garlic
- ½ (8-oz) pkg chopped onion
- 1 (14.5-oz) can fire-roasted diced tomatoes
- ½ cup raisins
- ½ cup pimiento-stuffed green olives, halved or sliced
- 1 tsp paprika
- 1 tsp salt
Instructions
- Cook turkey in a large nonstick skillet over medium heat 8 minutes or until cooked and no longer pink; drain. Add broth, vinegar, garlic, and onion; cook 5 minutes or until liquid is almost evaporated.
- Add tomatoes, raisins, olives, paprika, and salt; cook 3 minutes or until thick.
Side Dish Ingredients
- 1 (18-oz) pkg premium romaine salad
- 1 cup grape tomatoes
- ½ cup shredded carrots
- ⅓ cup (or more) blue cheese dressing (or use Ranch)
- 1 (9.25-oz) pkg nacho cheese-flavored tortilla chips
Side Dish Instructions
- Toss together all ingredients except chips in a bowl. Season with pepper to taste.
- Serve nacho chips alongside picadillo.
