Eggs in Zucchini Nests

Ingredients
- 4 zucchini
- 8 slices bacon
- ½ tsp salt
- ½ tsp pepper
- 8 large eggs
- 2 Tbsp chopped fresh basil
Instructions
- Use a spiralizer to cut each zucchini into noodle-shaped strands. Or cut zucchini lengthwise into ¼-inch-thick slices, stack 3 slices at a time, and cut lengthwise into thin strips to resemble noodles.
- Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Remove bacon from skillet; crumble, reserving 3 Tbsp drippings in skillet.
- Add zucchini, salt, and pepper; gently stir to combine.
- Make 8 indentations in zucchini mixture, shaping into nests; crack 1 egg into each indentation.
- Cover and cook 6 to 8 minutes or until egg whites are firm and yolks are cooked to desired doneness. Sprinkle with basil and bacon.
