Breakfast Grilled Cheese

Ingredients

  • 6 slices bacon
  • 4 large eggs
  • 3 Tbsp butter, softened and divided
  • 4 slices sourdough bread
  • 4 sliceds provolone cheese

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp. Drain on paper towels.
  2. Whisk eggs in a large bowl until smooth; season lightly with salt and pepper.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add eggs, and cook, stirring occasionally, until set. Remove from heat.
  4. Spread remaining butter on one side of each bread slice. Top 2 nonbuttered sides with 1 slice cheese, eggs, bacon, and remaining cheese. Cover with bread slices, buttered sides up.
  5. Cook sandwiches in skillet over medium heat until bread is toasted and cheese is melted. Serve immediately.

Side Dish Ingredients

  • 1 cup strawberries, hulled and halved
  • ½ (4.4-oz) pkg blueberries
  • 1 banana, sliced

Side Dish Instructions

  1. Toss together all ingredients just before serving.
