Two-Cheese Chicken
Mashed Potatoes and Bacon-Wrapped Green BeansIngredients
- 2 (6-oz) boneless, skinless chicken breasts
- 1 large egg
- ½ sleeve round buttery crackers, crushed
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme
- 2 slices mozzarella cheese
Instructions
- Preheat oven to 400ºF. Pound chicken to an even thickness in a zip-top plastic bag with the heel of your hand or a meat mallet. Lightly season with salt and pepper.
- Lightly beat egg in a shallow bowl; dip chicken in egg, letting excess drip off.
- Stir together cracker crumbs. Parmesan, and thyme in a shallow dish; dredge chicken in mixture.
- Place chicken on a lightly greased rimmed baking sheet. Bake 15 minutes. Top each piece of chicken with a slice of cheese. Bake 5 minutes longer or until chicken is done.
Side Dish Ingredients
- 1 (12-oz) pkg green beans
- 3 slices bacon, cut in half
- 1 Tbsp balsamic vinegar
- 1 (24-oz) carton refrigerated mashed potatoes
Side Dish Instructions
- Preheat oven to 400°F. Divide green beans into 6 bundles. Wrap each bundle in 1 slice bacon and place on a foil-lined rimmed baking sheet. Season lightly with salt and pepper.
- Bake 20 to 25 minutes or until beans are tender and bacon is browned. Drizzle with vinegar.
- Heat potatoes according to package directions.
