Two-Cheese Chicken

Mashed Potatoes and Bacon-Wrapped Green Beans

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1 large egg
  • ½ sleeve round buttery crackers, crushed
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 2 slices mozzarella cheese

Instructions

  1. Preheat oven to 400ºF. Pound chicken to an even thickness in a zip-top plastic bag with the heel of your hand or a meat mallet. Lightly season with salt and pepper.
  2. Lightly beat egg in a shallow bowl; dip chicken in egg, letting excess drip off.
  3. Stir together cracker crumbs. Parmesan, and thyme in a shallow dish; dredge chicken in mixture.
  4. Place chicken on a lightly greased rimmed baking sheet. Bake 15 minutes. Top each piece of chicken with a slice of cheese. Bake 5 minutes longer or until chicken is done.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • 3 slices bacon, cut in half
  • 1 Tbsp balsamic vinegar
  • 1 (24-oz) carton refrigerated mashed potatoes

Side Dish Instructions

  1. Preheat oven to 400°F. Divide green beans into 6 bundles. Wrap each bundle in 1 slice bacon and place on a foil-lined rimmed baking sheet. Season lightly with salt and pepper.
  2. Bake 20 to 25 minutes or until beans are tender and bacon is browned. Drizzle with vinegar.
  3. Heat potatoes according to package directions.
