Ingredients

  • 1 Ruby Red grapefruit, sliced
  • 1 navel orange, sliced
  • 1 small avocado, sliced
  • 3 oz feta cheese (about ½ block), sliced
  • 1 (0.5-oz) pkg fresh basil leaves
  • ¼ cup coarsely chopped pistachios
  • 2 Tbsp light balsamic vinaigrette
  • ¼ tsp freshly ground pepper

Instructions

  1. Arrange grapefruit, oranges, avocados, cheese, and basil on 2 serving plates; top with nuts, and drizzle with vinaigrette. Sprinkle each serving with pepper.

Side Dish Ingredients

  • 2 French steak rolls, halved lengthwise
  • 2 tsp olive oil
  • 2 Tbsp freshly grated Parmesan cheese
  • ¼ tsp freshly ground pepper

Side Dish Instructions

  1. Preheat broiler. Arrange bread, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with cheese and pepper. Broil 2 to 3 minutes or until bread is toasted and cheese is melted.
