Pineapple-Macadamia Nut Energy Bars

Ingredients
- 1 cup macadamia nuts, coarsely chopped
- ⅔ cup sunflower kernels
- 3 Tbsp chia seeds
- ½ cup chopped dried pineapple, divided
- 2 Tbsp warm water
- 2 Tbsp honey
- 1 large egg white
- ¾ tsp kosher salt
- 2 tsp olive oil
Instructions
- Preheat oven to 350°F. Spread macadamia nuts and sunflower kernels on a rimmed baking sheet.
- Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
- Process nut mixture in a food processor until coarsely chopped; transfer to a bowl, and stir in chia seeds.
- Process ¼ cup pineapple, water, honey, egg white, and salt in food processor until smooth, scraping sides as needed.
- Stir into nut mixture with ¼ cup chopped pineapple until blended.
- Grease an 8-inch square pan with oil; spread nut-pineapple mixture in pan, pressing firmly into an even layer.
- Bake 20 to 25 minutes or until golden brown; let cool 15 minutes. Cut into bars.
