Pineapple-Macadamia Nut Energy Bars

Ingredients

  • 1 cup macadamia nuts, coarsely chopped
  • ⅔ cup sunflower kernels
  • 3 Tbsp chia seeds
  • ½ cup chopped dried pineapple, divided
  • 2 Tbsp warm water
  • 2 Tbsp honey
  • 1 large egg white
  • ¾ tsp kosher salt
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 350°F. Spread macadamia nuts and sunflower kernels on a rimmed baking sheet.
  2. Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
  3. Process nut mixture in a food processor until coarsely chopped; transfer to a bowl, and stir in chia seeds.
  4. Process ¼ cup pineapple, water, honey, egg white, and salt in food processor until smooth, scraping sides as needed.
  5. Stir into nut mixture with ¼ cup chopped pineapple until blended.
  6. Grease an 8-inch square pan with oil; spread nut-pineapple mixture in pan, pressing firmly into an even layer.
  7. Bake 20 to 25 minutes or until golden brown; let cool 15 minutes. Cut into bars.
