Maple Sausage Pancakes

Ingredients

  • ½ (7.4-oz) pkg plant-based breakfast sausage patties
  • 1 cup high-protein buttermilk pancake mix
  • 1 large egg, lightly beaten
  • 1 cup water
  • 1 Tbsp butter, melted
  • 6 Tbsp pure maple syrup, divided

Instructions

  1. Cook plant-based sausage in a large nonstick skillet according to package directions; drain. Crumble sausage.
  2. Preheat griddle or a large nonstick skillet over medium heat. Whisk together pancake mix, egg, water, butter, and 2 Tbsp syrup.
  3. Drop batter by ¼ cupfuls onto griddle, and cook 3 to 4 minutes or until tops are covered with bubbles.
  4. Serve pancakes topped with crumbled sausage and remaining ¼ cup syrup.
