Maple Sausage Pancakes

Ingredients
- ½ (7.4-oz) pkg plant-based breakfast sausage patties
- 1 cup high-protein buttermilk pancake mix
- 1 large egg, lightly beaten
- 1 cup water
- 1 Tbsp butter, melted
- 6 Tbsp pure maple syrup, divided
Instructions
- Cook plant-based sausage in a large nonstick skillet according to package directions; drain. Crumble sausage.
- Preheat griddle or a large nonstick skillet over medium heat. Whisk together pancake mix, egg, water, butter, and 2 Tbsp syrup.
- Drop batter by ¼ cupfuls onto griddle, and cook 3 to 4 minutes or until tops are covered with bubbles.
- Serve pancakes topped with crumbled sausage and remaining ¼ cup syrup.
