Layered Rice and Bean Burritos

Ingredients

  • 1 (8.8-oz) pouch microwaveable brown rice
  • 4 low-carb whole wheat tortillas
  • ¾ cup low-sodium refried beans
  • ¾ cup no-salt-added black beans, drained and rinsed
  • 1⅓ cups shredded iceberg lettuce
  • 2 Roma tomatoes, chopped
  • 1 cup shredded reduced-fat Mexican-blend cheese
  • ½ cup guacamole

Instructions

  1. Cook rice according to package directions.
  2. Heat tortillas according to package directions. Spread refried beans on warm tortillas. Top with rice, black beans, lettuce, tomatoes, cheese, and guacamole.
  3. Fold in both sides of each tortilla; roll up to completely enclose filling.
