Layered Rice and Bean Burritos
Ingredients
- 1 (8.8-oz) pouch microwaveable brown rice
- 4 low-carb whole wheat tortillas
- ¾ cup low-sodium refried beans
- ¾ cup no-salt-added black beans, drained and rinsed
- 1⅓ cups shredded iceberg lettuce
- 2 Roma tomatoes, chopped
- 1 cup shredded reduced-fat Mexican-blend cheese
- ½ cup guacamole
Instructions
- Cook rice according to package directions.
- Heat tortillas according to package directions. Spread refried beans on warm tortillas. Top with rice, black beans, lettuce, tomatoes, cheese, and guacamole.
- Fold in both sides of each tortilla; roll up to completely enclose filling.
