Korean Turkey Bibimbap

Ingredients

  • 1½ Tbsp low-sodium soy sauce
  • 2 Tbsp dark sesame oil, divided
  • ½ Tbsp gochujang (Korean chile paste)
  • ½ lb ground turkey
  • ½ (8-oz) pkg sliced mushrooms
  • ½ (12-oz) pkg vegetable stir-fry medley
  • 2 large eggs

Instructions

  1. Combine soy sauce, 1 Tbsp oil, and gochujang in a bowl.
  2. Cook turkey and mushrooms in ½ Tbsp hot oil in a large nonstick skillet or wok over medium heat 5 minutes or until turkey starts to brown.
  3. Add half of soy sauce mixture; cook 3 to 4 minutes or until turkey is browned and crumbly and sauce is almost absorbed. Remove from heat; keep warm.
  4. Steam stir-fry medley according to package directions; keep warm.
  5. Heat ½ Tbsp oil in skillet over medium heat. Crack eggs into skillet; cook 2 minutes per side or to desired doneness.
  6. Divide Sesame Cauli-Rice recipe between 2 bowls. Top each with turkey mixture, vegetables, and 1 egg. Drizzle with remaining sauce.

Side Dish Ingredients

  • ½ (12-oz) pkg frozen cauliflower rice
  • ½ Tbsp sesame oil
  • 2 Tbsp chopped green onion
  • ⅛ tsp garlic salt

Side Dish Instructions

  1. Cook cauliflower rice in hot oil in a nonstick skillet over medium heat according to package directions. Stir in onion and garlic salt.
